Crack the eggs and separate the whites from the yolks.
Whisk the egg whites until they stand up in peaks, and then fold in the beaten yolks afterwards. This will make the omelette light and fluffy.
Grate the cheese.
Wash and dry the tomato. Chop it in half, scoop out the centre and discard. Chop up the outer part of the tomato.
Chop up the ham.
The omelette only needs around two minutes of actual cooking time. Be very careful not to burn it.
Place the butter into a hot frying pan until it melts and is sizzling.
Add the egg mixture and swirl around the pan until it is evenly spread.
As soon as the bottom of the egg mixture starts to fi rm up (this will only take a few seconds) add the cheese, tomato and ham and spread them evenly over the egg.
With a spatula, ease around the edge of the omelette to lift it from the pan. It will only need to cook for a minute or so. As soon as it looks firm, use the spatula to fold one half of the omelette onto the other half to create a half moon shape.
Slide the omelette out of the pan and onto a plate.
